DENBIES IN CO-INOCULATION TRIAL WITH LALLEMAND
Denbies Wine Estate, England’s largest vineyard has embarked on a co inoculation trial in conjunction with Lallemand.
The process involves both the alcoholic and malolactic fermentations proceeding in unison as opposed to concurrently as is normally the case and will be performed on Chardonnay and Pinot Noir lots destined for the ultra-premium Greenfields marque.
Careful monitoring of the chemical parameters during the fermentations will further add to Lallemand’s existing co fermentation data base from around the world. Co-inoculation trials have shown that not only there is a gain of time when both processes are running simultaneously, but also it has been shown that the fruit and varietals characters are more present. It will be interesting to see if those observations are seen in this trial.
John Worontschak, Denbies Wine Estate Consultant Operations Director says, “I am very excited about the prospect of conducting both the primary and secondary fermentation simultaneously. This is a significant deviation from the norm and in my view will increase the quality of our base wines by allowing for earlier sulphuring. Furthermore, the warmth required for malolactic fermentation will come from the yeast fermentation and not through warming of the tanks post harvest. This will not only provide a cost saving but will help to reduce Denbies overall carbon footprint.
